Theo -- I sympathize about the squirrels, last year the robins ate all my berries, but this year I will be armed with netting, and our neighbor's cat (they moved in last fall) who prefers our sunny yard.

Thanks for the great tip regarding lemon in the jam. My mom puts lemon on fresh strawberries, and my grandmother swears by it in her apple pie, so I bet it would also add the perfect touch to jam!

I grow my own (organic) raspberries, but have given up on strawberries, since the squirrels always eat them as soon as they get a bit pink.

My grandmother passed away 11 years ago, but she did give me a general idea of her very simple and yummy jam recipe (works for both strawberries and raspberries) - she added sugar and sliced lemon to the berries, and cooked; she never added pectin. Then she jarred the lemon slices with the berries, and it was a treat to find a jar with a slice of "strawberried" lemon. I actually don't exactly follow my Bobie's recipe, since I like my jams to be somewhat less sweet than is traditional, so though I still use the lemon, I find that I need to add pectin.

Heh. I promise to post a recipe, if I can get one out of my grandmother (she doesn't actually use recipes) or I find another one that works!
