My Dear Readers:
There has been pathetically little interest in this Vegetarian Challenge. I’ve concluded that either you are already all vegetarians or you are uncertain how to go about eating vegetarian for an entire week, let alone three days. If the latter option is true for you, maybe I can help you out by sharing with you how our family is eating vegetarian this week.
Sunday: Three Vegetarian Meals

Amy’s Kitchen Roasted Vegetable Pizza (I usually take off from cooking from scratch for a few meals every weekend and this pizza is a standard in our freezer.)
Filtered Tap Water
Organic Apple
Dinner
Tomato, Mushroom & Pecan Casserole
Red Cabbage Salad with Asian Dressing
Home made bread with Earth Balance
Old Speckled Hen (beer not a bird)
2 Squares 73% Dark Chocolove
And, for tomorrow I have made tofu salad for my husband’s lunch. On a regular work day, Iggi packs his own lunch with the following: turkey sandwich; carrot & celery sticks; a handful of mixed nuts; string cheese; and a couple of pieces of fruit. This week, he will be taking tofu salad sandwiches instead of turkey.
Tofu Salad Recipe ( the vegan cousin to Egg Salad and Tuna Salad)
1 package firm organic tofu (I use Denver Tofu, because it is local and what I grew up eating — thanks Mom!)
6 Tbsp Vegenaise (plus or minus to taste)
2 Tbsp Dijon or your favorite spicy mustard
1/4 cup Bread & Butter pickle chopped
1 Carrot chopped
1 Celery stick chopped
Salt & Pepper to taste
Shake of Paprika
Pinch Cayenne (optional)
To make the salad: Crumble tofu, chop carrots, celery & pickles, mix all ingredients and spices and eat or store in a glass container. Serve on whole grain bread plain or with lettuce & tomato or your favorite sandwich toppings.

Just found your blog via Make it from Scratch. I don’t eat any red meat (pig + cow), and not much poultry, so I’m game (ha, that’s a pun!) for the challenge.
I grew up in CO, too!
I also found your blog through the Make It from Scratch carnival. My goal the past few months has been to make more vegetarian meals since my husband has kidney disease. (Animal protein is the hardest for the kidneys to process.) However, because the man loves his meat so much, I couldn’t make him go vegetarian for all his meals. I might not mind so much, but I’m afraid I’d have mealtime mutiny on my hands if I tried to make him, too.
I definitely appreciate the meal ideas, though! I’m always looking for new and interesting meatless meals.
Ewok — if you haven’t already, I would check out Seitan. Somewhere I have a recipe for orange “beef” & broccoli that I have served to meat eaters and they thought it was really beef. I’ll see if I can find it for you. TVP prepared correctly with a little tamari (surprisingly)can also be a great substitute for meat in tomato sauce for spaghetti and lasagna.
