So, I was shamelessly inspired by Surely You Nest’s post yesterday on Summer Fruit Galettes and I had to make my own. Truthfully, I am not sure I’ve eaten or consciously been aware of the “galette” prior to her post or perhaps since the only French Bakery in town closed about 15 years ago! Nevertheless I googled an image and thought “mmm mmm” Daddy & Baby Green Me would sure like one of those!
I used apricots, as that is what I have in abundance. Alas, I don’t own a Chez Panisse cook book, I own a Cafe Beaujolais
book, so I had to get the details online. I am bad with names, so what can I say? In the end, I used this recipe instead, as I liked the addition of vanilla to the crust! I also added a few fresh basil leaves to two of the three galettes. I am having a blast growing my own herbs and adding them to recipes both sweet and savory. A few weeks ago I added rosemary to a pie crust, which was a very nice addition!
P.s. The photos do not do these tasties justice. The crust is light and flaky, the fruit mildly sweet, cooked, yet firm. I will be making these again — better than a danish by 1000 times!!!
