As I mentioned earlier this week I have hopes of entering the IronCupcake Challenge for February. The flavor of this challenge is coffee, so I gave it a trial run. This cupcake was my second attempt at gluten free and I think that it worked superbly, light, fluffy and no aftertaste (other than the intended spices). This recipe is definitely a keeper! My winning ingredients were arrowroot, cinnamon and cardamom in the cake. And almond extract, coffee liquor and cinnamon in the frosting on top.
Sadly, although the cupcake is delish, I will not be competing on this cupcake as the winning cupcake for last months challenge also incorporated cardamom, so I am back to the drawing board for something more original. At the least I can say that the inspiration for this cupcake is my blogging friend Lisa of Condo Blues, because she brews her coffee with cinnamon and cardamom! If only I had the proper box I’d pop one in the mail to her this afternoon!
